I rode to Michael’s mid-afternoon to look for a white watercolor pencil as it’s my preferred media for adding white to alcohol marker drawings. It’s perfect for making polar bears white on colored Post-Its, too. No luck - they didn’t have any watercolor pencils. I bought a Prismacolor Premier White Pencil PC938 instead.

The ride to and from was pleasant under cloudy skies, moderate temps and calm to light winds. Today’s riding conditions:
This afternoon I made pasta salad. My favorite way of evenly blending all the flavors: toss all of the mix-ins with our favorite dressing before adding them to the pasta. After the mix-ins are thoroughly coated, I fold in the pasta. Voila! Deliciousness. The longer it sits in the fridge, the yummier it becomes.

I also tried a new-for-me-recipe from Amie McGraham’s Orts & Reports - Jessica’s Apple Cookies. I modified it slightly to fit our plant-based lifestyle, and loved the feel of the batter so much so that I tried it as doughnuts as well as drop cookies. The result:
These smelled great while baking; the doughnuts’ texture was better than the cookies. I realized when the cookies were in the oven that I could have excluded the egg substitute all together. I will next time as it will reduce or eliminate the gummy-texture many plant-based baked goods can have. The nutmeg-forward flavor is really good, I’ll definitely make them again.
